Acqua began in Phuket over 15 years ago, the brainchild of renowned Sardinian chef, Alessandro Frau and his life partner, Marcella Mocci. When it became known they would open in Bangkok,
their Phuket followers became concerned they would no longer be here every day. However, worry not, the service team are as engaging as ever and with new head chef Fabrizio Crocetta in place
the kitchen is in great hands.


The menu remains the same, an extensive a la carte with Acqua signatures alongside classics and a range of seasonal specials. Begin with black Mediterranean mussels with Italian parsley and garlic, drizzled with Vermentino or plum for a house signature of Alessandro's prized Rosso di Mazara prawns, succulent and delicately piquant with a smoked mozzarella cream, Sardinian sea urchin and Siberian caviar, simply unforgettable. There are many great mains to choose from, perhaps pasta of tagliatelle with shaved black truffle when in season and a super fine butter sauce using Occelli, of course. Charcoal-grilled Japanese sanma fish in a crustacean reduction with datterini tomatoes is almost indescribable, a delicate flesh, combined with a flavour packed sauce. Their house specialty of suckling pig remains legendary. The wine list is encyclopedic with several premium options available by glass.
